Hey yall!! Christmas Eve is tomorrow, and everyone will be preparing and eating lots of Nomenom! Ever since I was a little girl, Christmas Eve has been my favorite of all the annual holidays. My Mom’s side of the family would all gather at my Grandma’s house for finger foods and exchanging presents. Each family would contribute one sweet and one not-sweet food to the buffet. With the passing of my Grandma, over a year ago, we no longer gather the entire family on Christmas Eve. Our new tradition is basically the same, only the location has changed to my Mom and Dad’s house, and our gathering includes my immediate family (Mom, Dad, my two sisters and their husbands and children, and my own).
This year I will be making Cajun Country Shrimp Dip and Apple Pie Bake. Shrimp Dip is perfect for such a gathering, and I prepare it a day in advance so that the flavors have time to meld before serving. I will serve the dip with butter crackers and maybe some corn chips. The Apple Pie Bake is a recipe I found online and has become a family favorite. I really don’t vary the recipe too much, but instead of serving it with ice cream, I make homemade frosting. It is extremely important to serve this treat warm. If you have access to a microwave oven, pop each serving in there for 15 seconds and enjoy!
